You should go see the Bar J Wranglers--it is a great musical show with a good dinner--lots of fun for family

Go to http://jacksonholejournal.net. I lived in Jackson for five years and I know all the fun things to do. Tops on my list would be a whitewater raft trip. Avoid too much downtown like the shootout. Definitely take in the rodeo and the Bar J chuckwagon. I would hike the Taggart Lake trail and take the ferry across Jenny Lake.
Jackson Hole Whitewater is a great trip! Scenic or whitewater or combos! Also, paragliding is a huge rush! www.jhparagliding.com..
